Following on from yesterday's aperitif suggestion, today we will be having our starter! Something you can eat as a stand alone dish, we will be having Thai crab cakes with a sweet chilli jam. Three elements need to be taken into consideration: the crab meat, the chilli heat and the method of cooking. So, firstly the crab. To complement this light delicate meat, we need a light delicate wine so it's definitely a white! To combat the heat of the chilli, we need a wine which is light on alcohol with a little sweetness. Lastly as the crab cakes are fried, we need some acidity. So our choice is simple...
