Today's dinner party wine pairing is for the fish course. We're cooking up Lemon sole in a brown butter sauce.
This delicious dish is elegant and refined and therefore needs a suitably elegant and refined wine to go with it. Again we need to look at the different elements of this dish. Lemon sole has a delicate flavour so we are looking at a French Chardonnay as opposed to the more bold flavours of the New World. We need some subtle oak to complement the buttery sauce with a good mouth watering acidity to cut through the fat.
