Wine of the day plus pairing!

Nicolas Potel Bourgogne Chardonnay 2011Buy it here!

Today's dinner party wine pairing is for the fish course. We're cooking up Lemon sole in a brown butter sauce.
This delicious dish is elegant and refined and therefore needs a suitably elegant and refined wine to go with it. Again we need to look at the different elements of this dish. Lemon sole has a delicate flavour so we are looking at a French Chardonnay as opposed to the more bold flavours of the New World. We need some subtle oak to complement the buttery sauce with a good mouth watering acidity to cut through the fat. A Chardonnay's citrusy notes will also work well with the lemon and capers in the sauce. We therefore wholeheartedly recommend our Burgundian Nicolas Potel Chardonnay at £9.95 a bottle. Light and fruity with gentle oak flavours, come in and try some for yourself!

Following on from yesterday's aperitif suggestion, today we will be having our starter! Something you can eat as a stand alone dish, we will be having Thai crab cakes with a sweet chilli jam. Three elements need to be taken into consideration: the crab meat, the chilli heat and the method of cooking. So, firstly the crab. To complement this light delicate meat, we need a light delicate wine so it's definitely a white! To combat the heat of the chilli, we need a wine which is light on alcohol with a little sweetness. Lastly as the crab cakes are fried, we need some acidity. So our choice is simple...
